Kitchen Recipes - Ruz Bukhari - 10th October 2013
Ruz Bukhari
Ingredients for Chicken:
1 teaspoon garlic powder
1 teaspoon paprika powder
3 tablespoons olive oil
2 tablespoons lemon juice
salt.
Directions:
Marinate it overnight or for atleast 3-4 hours. Steam the chicken till it's cooked and then put it under the 'grill' to get the color.
Ingredients for Ruz:
3 tablespoons oil
Rice 2 cups
Chicken stock 2.5 cups
1 onion finely sliced
1/2 cup chickpea's
2 carrots grated
1 dried lemon
1 star-anise flower
1 tsp cumin seeds
salt
black pepper powder.
2 tablespoons butter.
pine nuts , raisins lightly fried
Directions:
Soak the rice, in a separate pan heat the oil and add-in the onions cook till light brown. Add the carrots, chick peas with all spices and fry for 3-5 minutes then add the chicken stock and bring it to boil. Now add rice and salt & black pepper. Cook till the rice are 3/4 done. Add the butter, lower the flame and cook for another 5-7 mins with covered lid on DUM (steam).
Serve with steamed chicken garnishing with fried onions, pinenuts and raisins.
