Kitchen Recipes - Ruz Bukhari - 10th October 2013

Ruz Bukhari
Ingredients for Chicken:
1 teaspoon garlic powder
1 teaspoon paprika powder
3 tablespoons olive oil
2 tablespoons lemon juice
salt.
Directions:
Marinate it overnight or for atleast 3-4 hours. Steam the chicken till it's cooked and then put it under the 'grill' to get the color.
Ingredients for Ruz:
3 tablespoons oil
Rice 2 cups
Chicken stock 2.5 cups
1 onion finely sliced
1/2 cup chickpea's
2 carrots grated
1 dried lemon
1 star-anise flower
1 tsp cumin seeds
salt
black pepper powder.
2 tablespoons butter.
pine nuts , raisins lightly fried
Directions:
Soak the rice, in a separate pan heat the oil and add-in the onions cook till light brown. Add the carrots, chick peas with all spices and fry for 3-5 minutes then add the chicken stock and bring it to boil. Now add rice and salt & black pepper. Cook till the rice are 3/4 done. Add the butter, lower the flame and cook for another 5-7 mins with covered lid on DUM (steam).
Serve with steamed chicken garnishing with fried onions, pinenuts and raisins.

Homemade KFC Crispy Fried Drumsticks
Ingredients:
8 chicken drumsticks
Seasoning:
1 tsp of salt
½ tsp of black pepper
1 tsp of garlic powder
1 tsp of chili powder
1 tsp of brown sugar
Flour Mixture:
1 cup of flour
4 tbsp of cornstarch
1 tsp of salt
1 tsp of pepper
1 tsp of paprika
1 tsp of chili powder
5 tbsp breadcrumbs
Directions:
1. Wash, clean, removes skin and fat from chicken drumsticks.
2. Pat the chicken dry with a paper towel and place it in a large bowl. Add all the seasoning.mix well and boiled them.
3. Mix all the flour mixture ingredients together. Mix well and set it aside.
4. drain the boiled chicken and dont allow it to cool.
5. coat the drumstick with the seasoned flour, shake off the excess flour. Fry the drumstick, turning it often so that it cooks evenly and doesn’t get brown too fast.
6. Cook until drumstick it’s done and golden brown. Drain on paper towels and serve warm with sweet chili or tomato sauce.

Fish Manchurian
Ingredients
1/2 kg Boneless fish cubed

1 stick Spring onion chopped
1 onion sliced
1 green chilli chopped
1Carrot (cubes)
1Capsicum (cubes)
Oil 3 – 4 tbsp
Method
Cut fish into cubes, add in 1 egg, 3 tbsp flour, 3 tbsp corn flour a little salt and ½ tsp black pepper.
Mix well and deep fry fish cubes & keep aside
In a separate pan heat 2 – 3 tbsp oil, add 1 tbsp garlic paste and 4 dry red chilies.
Add 1 chopped capsicum, 1 chopped carrot, chopped spring onion , sliced onion green chilli and stir fry for a minute
Add 4 tbsp tomato ketchup, 4 tbsp tomato paste, 2 tbsp soya sauce, 2 tbsp Worchester sauce, salt to taste, 2 tsp vinegar, 1/2 tsp Chinese salt, ½ tsp white pepper powder and 1 tsp sugar.
Cook for another 1 – 2 minutes
Add fried fish and let it cook for 1-2 minutes.
If you require gravy add 1/2 cup water and 1 tbsp diluted corn flour.

Kitchen Recipes - Ginger Wings - 7th October 2013

Ginger Wings
Ingredients:
For the wings..
Marinate the chicken wings with Salt, Black Pepper, vinegar, Ginger, chili sauce and keep aside for 1 hour.
For Batter..
Directions:
In a bowl, combine the plain flour, cornflour, baking powder, egg, soya sauce, Salt, black pepper, chinese salt, red chilli powder and milk until smooth and blended. Combine bread crumb and sesame seeds in another bowl. Dip one wing at a time into the batter then Dredge them in bread crumb mixture. Deep fry the wings a few at a time until golden brown, about 10 minutes.
Serve with any sauce of your choice.
Enjoy!!!

Fish Nuggets
Ingredients:
Fish ½ kg boneless 2 inch cubes
Salt ½ tsp
Black pepper ½ tsp
Mustard paste ½ tsp
Lemon juice 2 tbsp
Egg 1
Milk 2 tbsp
Ingredients for batter
Self raising flour 4 tbsp
Corn flour 2 tbsp
Baking powder ¼ tsp
Salt and white pepper ¼ tsp each
Chilled water to make batter as required
Bread crumbs 1 cup
Directions:
Marinate fish cubes with salt, pepper, mustard and lemon juice, dip in egg and milk mixture then in prepared batter, roll in crumbs and deep fry.
Serve with tartar sauce.

Reshmi Kebab - 1st October 2013
Ingredients:
Minced Chicken 1/2 kg
Green Chilli paste 2 teaspoon
Garlic paste freshly grinded 1 teaspoon
Ginger Paste freshly grinded 1 teaspoon
Almond paste 2 teaspoon
Onion finely chopped
Fresh Coriander leaves chopped 1/4 cup
Lemon juice 1 teaspoon
Butter (melted) for brushing 1/4 cup
Salt to taste
Red Chilli powder to taste
Black pepper powder 1 teaspoon
White pepper powder 1/2 teaspoon
Roasted Cumin powder 1 teaspoon
Roasted Coriander powder 1 teaspoon
Kubeb powder 1 teaspoon
Bread slices mashed 2-3
Egg white (optional) 1/2 to 1
Directions:
Mix together all ingredients (except butter) and knead well. Keep aside for 15-20 minutes for marination.
Make long kababs and insert pre-soaked wooden skewers.
Grill over charcoal fire till chicken is tender, apply butter during grilling.
Serve with Mint Chutney and Salad and Roti.

Chicken Manchurian & Egg Fried Rice - 19th September 2013

Manchurian Recipe
250gm boneless chicken breast, cut into small cubes
Marinate the chicken in:
INGREDIENTS
1 tbsp. corn flour
½ an egg (beaten) TIP: reserve the other half for the egg-fried rice
½ tsp. salt
½ tsp. black pepper powder
pinch of red chili powder or flakes (optional)
pinch of sugar
1 tsp. soya sauce
½ tsp. ginger/garlic paste
Set this aside for about half an hour. Then fry until golden, do NOT over fry otherwise the chicken will turn hard. Remove and set aside.
Now to make the sauce you will need the following:
INGREDIENTS
1 tbsp. chopped onions
2 tbsp. oil
1 tbsp. ketchup
1 tsp. tomato paste
½ tsp. ginger
½ tsp. garlic
salt to taste
1 tsp. sugar
½ cup water or chicken stock
1 tsp. corn flour mixed with water to form a light paste
1 whole red chili, slit
1 green chili, chopped
½ tsp. black pepper
splash of soya sauce
INSTRUCTIONS
Heat the oil, add the whole red chili, ginger and garlic pastes followed by the spring onions and chopped green chili. Fry for a minute then add the tomato paste, ketchup, sugar and salt/pepper. Cook for 3-4 minutes, then add the water/stock. Let it come to a simmer, lower the heat and add the corn flour paste. The sauce will instantly start to thicken. Once it is of a good thick consistency, add the fried chicken and a splash of soya sauce. Stir together and adjust salt, simmer for 3 more minutes on low heat, then turn off the heat and serve over fried rice
Egg-Fried Rice
INGREDIENTS
2 cups cooked rice (boiled with salt and a tsp. of oil, then drained and cooled completely)
3 tbsp. oil
pinch of salt and pepper
1 and half egg (leftover half is from the manchurian sauce)
1 tbsp. onion, chopped
1 small green chili chopped (optional)
1 small green capsicum, chopped
1 small carrot, grated
¼ tsp. garlic paste
splash of soya sauce
INSTRUCTIONS
Heat the oil, add the garlic and spring onions, fry for a minute, then add the egg, salt and pepper and scramble it. Now add the carrot, stir fry for a few minutes then add the cooked rice. Stir fry for a minute, splash some soya sauce on it, then put the heat on very low and cover the pan

Hot & Spicy Fish Burger - 12th September 2013

Hot & Spicy Fish Burger
Ingredients:
Egg 1
Fish fillet 500gm
Milk 2 tbsp
Black pepper 1 tsp
Soya sauce 1 tbsp
Plan flour 1 tbsp
Corn flour 1 tbsp
Crushed red chili 1 tsp
Corn crumbs 2 cups
Oil 2 tbsp
Directions:
Take a bowl and add egg, milk, salt, black pepper, soya sauce, plan flour, corn flour and crushed red chili.
Mix well and marinate fish fillets in this mixture for half an hour.
Fold fish fillets in the corn crumbs and fry in the oil or bake in an oven for 15 minutes each side.

lettuce
cheese slice (optional)

tomato sauce

Cut the buns into half and heat them little from the inner sides.Keep aside for a while.
Spread mayonnaise on a half bun (just one half) place lettuce leaves, cheese slice ( i didnt use) , fish fillet, tartar sauce and ketchup/tomato sauce, then covered with the other half bun and serve.
